Peppermint Brownie Crisps

18 ⅓ oz. pkg. fudge brownie mix
½ cup flour
¼ cup vegetable oil
3 tbsp. water
2 eggs
15 mint-flavored hard candies, coarsely crushed, divided

In a large mixing bowl, combine first 5 ingredients, mixing by hand. Scoop 1 tbsp. of batter onto greased cookie sheet, swirling to create a circle; repeat with 5 additional tbsp. of batter. Bake in a preheated 350° oven until edges are set and centers are firm (9-10 min.); remove from oven and sprinkle tops with crushed mints. Cool on cookie sheet 5 min.; remove to wire rack to cool completely. Repeat with remaining batter.

Good to Know:

  • To keep cookies crisp, store in an airtight container with parchment paper between the layers.
  • For gift giving, stack 6 cookies in a clear plastic bag with squares of parchment between each cookie; tie with a colorful ribbon.
