Peppermint Brownie Crisps
Ingredients
  18 ⅓ oz. pkg.
fudge brownie mix
  
                                  
  ½ cup
flour
  
                                  
  ¼ cup
vegetable oil
  
                                  
  3 tbsp.
water
  
                                  
  2
eggs
  
                                  
  15
mint-flavored hard candies, coarsely crushed, divided
  
                      Directions
          - Preheat oven to 350°.
- In a large mixing bowl, combine first 5 ingredients (through eggs) by hand.
- Scoop 1 tbsp. of batter onto a greased cookie sheet, swirling to create a circle; repeat with 5 additional tbsp. of batter.
- Bake in preheated oven until edges are set and centers are firm (9-10 min.).
- Remove from oven; sprinkle tops with crushed mints. Let cookies cool on sheet pan for 5 min.
- Transfer cookies to wire racks to cool completely.
- Repeat with remaining batter.
Tasty Tips:
- To keep cookies crisp, store in an airtight container with parchment paper between layers.
- For gift giving, stack 6 cookies in a clear plastic bag with squares of parchment between each cookie; tie with a colorful ribbon.
