Zesty Lime Bars

Ingredients

1 ½ cups plus 3 tbsp. flour, divided
¾ cup Kowalski's Unsalted Butter, at room temperature
⅓ cup confectioners' sugar
1 pinch salt
5 oz. cream cheese, at room temperature
1 ⅓ cups sugar
4 eggs
¼ cup Kowalski's Freshly Squeezed Lime Juice (from the Produce Department)
¼ cup Kowalski's Freshly Squeezed Lemon Juice (from the Produce Department)
1 tsp. Kowalski's Organic Madagascar Vanilla Extract
2 tsp. lime zest, plus more for garnish

Directions
  1. Grease the bottom and sides of an 8x8" baking pan; line with parchment paper, leaving a 2" overhang on all sides.
  2. Using a stand mixer with paddle attachment, mix 1 ½ cups flour, butter, confectioners’ sugar and salt on low speed just until dough is clumpy (it will resemble wet sand and appear somewhat dry, but will hold together when squeezed.).
  3. Pour crumbs into the prepared pan; press mixture very firmly and evenly into the bottom of the pan; place pan in freezer 20 min. 
  4. Preheat oven to 350°.
  5. Bake crust in preheated oven until lightly browned (about 20 min.).
  6. In a blender, blend cream cheese, remaining flour, sugar, eggs, juices, vanilla and 2 tsp. zest on medium speed until smooth (about 2 min.).
  7. Pour filling over crust; bake until filling is set (28-33 min.).
  8. Remove from oven; cool completely.
  9. Serve topped with whipped cream and lime zest.
