Chipotle-Lime Crema

Makes about 1 cup

Ingredients

A note about gluten: When gluten-free chipotle chiles in adobo sauce are used, this recipe is gluten free.

1 medium lime
1 cup sour cream
1 medium canned chipotle chile pepper in adobo sauce, plus 1 tsp. adobo sauce from the can
1 tsp. garlic powder
1 tsp. granulated sugar
½ tsp. smoked paprika
- kosher salt and freshly ground Kowalski's Black Peppercorns, to taste

Directions
  1. Using a fine grater, remove 1 ½ tsp. zest from lime; set zest aside.
  2. Cut lime in half; squeeze to measure 1 tbsp. juice.
  3. In a food processor or blender, pulse remaining ingredients with lime juice and zest until mixture is well combined and chipotle pepper is completely broken up.
  4. Store in the refrigerator, covered, for up to 1 week. Try it topped on Juicy Lucia Burgers or use it for dipping Sweet Potato Taco Tots.

Tasty Tip:

  • This recipe will make a mild crema. For an extra kick, add an additional chipotle pepper and adobo sauce.
