Herbed Roasted Mushrooms

1 ¾ lbs. shiitake, baby bella or oyster mushrooms (or a combination), stemmed, cut into 1 ½" pieces
2 sprigs fresh rosemary, cut into ½" pieces
5 cloves garlic, thinly sliced
½ cup Kowalski's Extra Virgin Olive Oil
- kosher salt and freshly ground Kowalski's Black Peppercorns, to taste
2 tbsp. chopped fresh Italian parsley
  1. Preheat oven to 450°.
  2. In a large mixing bowl, toss mushrooms, rosemary and garlic with oil; sprinkle with salt and pepper.
  3. Divide mushrooms between 2 parchment-lined baking sheets; roast in preheated oven until dark brown (about 25 min.), stirring occasionally.
  4. Remove rosemary stems; adjust seasoning and garnish with parsley.
