Cheese that doesn't melt! Grilled juusto develops a golden, toasty exterior and warm, springy center. Here it's brightened by the fresh, garlicky acidity of chimichurri.

Ingredients
8 oz.
baked juusto cheese (such as Brunkow's Brun-uusto), cut into ½" strips
½ cup
Kowalski's Signature Fresh Chimichurri Sauce
- garnishes, to taste (optional): lemon wedges, fresh parsley and hot honey
Directions
- Preheat both sides of grill to medium-high heat; clean grill grates.
- Turn off one side of the grill (or move coals to one side). Place juusto strips on cooler side of grill; cook until dark grill marks form and cheese releases easily from the grates (about 3 min.).
- Flip juusto; continue grilling, lid down, until dark grill marks form on opposite side and cheese is thoroughly warm and slightly softened (2-3 min. more).
- Transfer grilled juusto to a serving platter; drizzle chimichurri on top.
- Serve immediately with desired garnishes.
