"Squeaky" halloumi has a texture similar to cheese curds. Grilling promotes a caramelized exterior and a creamy interior that pair well with a variety of toppings. Serve it as an appetizer or snack with a sparkling beverage – water, wine or beer – to cut through the cheesy richness.
Ingredients
8 oz. piece
halloumi cheese
¾ tsp.
Kowalski's Extra Virgin Olive Oil, plus more for drizzling
- lemon wedges, for squeezing over cheese
- freshly ground Kowalski's Black Peppercorns, to taste
1 loaf
Grilled Artisan Bread, for serving
- Valencia almonds and fig spread, for serving
Directions
- Preheat grill to medium-high heat; clean grill grates.
- If packed in water, blot cheese thoroughly dry with paper towels. If needed, slice cheese in half so it is no more than ¾" thick.
- Rub cheese evenly on all sides with oil; grill cheese, lid down, until dark grill marks form and cheese softens, turning once (about 5 min. per side).
- Transfer cheese to a serving dish. Drizzle with oil; squeeze juice from lemon wedges over top.
- Sprinkle with pepper; serve immediately with grilled bread, almonds and fig spread.
