Roasted Pumpkin Seeds with Lime
Ingredients
- seeds from 1 large Minnesota Grown pumpkin or 2 smaller Minnesota Grown pumpkins
1 tbsp.
Kowalski's Extra Virgin Olive Oil
1 tsp.
kosher salt, plus more for seasoning
1 tsp.
garlic powder
- freshly grated zest of 1 lime, divided
Directions
- Pull off any strands of flesh from pumpkin seeds; rinse seeds well. Let seeds dry on paper towels for several hrs.
- Preheat oven to 375°.
- In a medium mixing bowl, toss seeds with oil, salt, garlic powder and most of the zest.
- On a baking sheet lined with parchment paper, spread seeds out in a single layer; roast in preheated oven, stirring once or twice, until seeds are dry, sizzling and dark golden-brown in places (about 15 min.).
- Cool completely; season with reserved lime zest and salt to taste.
Tasty Tip:
- Minnesota Grown products are fresher by miles, which is why we recommend using seeds from a Minnesota Grown pumpkin in this recipe. When local options are unavailable, seeds sourced from elsewhere may be used.
