Ham and Cheese Muffins

Ingredients

1 pkg. Kowalski's Signature Muffin Baking Mix (from the Bakery Department)
2 eggs
1 cup milk
½ cup canola oil
1 cup finely diced ham (such as Boar's Head Tavern Ham)
1 cup shredded sharp Cheddar cheese, divided
¾ cup chopped green olives
½ cup sliced green onions (optional)

Directions
  1. Preheat oven to 400°.
  2. Pour muffin mix into a large mixing bowl; form a well in the middle. Crack eggs into the center of the well.
  3. Add milk and oil; whisk until everything is just moistened and no dry bits are visible.
  4. Fold in remaining ingredients, reserving some cheese for topping the muffins.
  5. Scoop mixture into a 12-count muffin tin sprayed with cooking spray or lined with paper baking cups; top with remaining cheese.
  6. Bake in preheated oven until golden (about 15 min.).
  7. Remove from oven; let muffins rest for 20 min. before serving.
