Ham and Cheese Muffins
Ingredients
1 pkg.
Kowalski's Signature Muffin Baking Mix (from the Bakery Department)

eggs
1 cup
milk
½ cup
canola oil
1 cup
finely diced ham (such as Boar's Head Tavern Ham)
1 cup
shredded sharp Cheddar cheese, divided
¾ cup
chopped green olives
½ cup
sliced green onions (optional)
Directions
- Preheat oven to 400°.
- Pour muffin mix into a large mixing bowl; form a well in the middle. Crack eggs into the center of the well.
- Add milk and oil; whisk until everything is just moistened and no dry bits are visible.
- Fold in remaining ingredients, reserving some cheese for topping the muffins.
- Scoop mixture into a 12-count muffin tin sprayed with cooking spray or lined with paper baking cups; top with remaining cheese.
- Bake in preheated oven until golden (about 15 min.).
- Remove from oven; let muffins rest for 20 min. before serving.
