Pancakes and Sausage on a Stick

Ingredients

2-4 qts. canola oil, divided
12 oz. Market Sausages Fresh Breakfast Links
1 cup flour
2 tbsp. sugar
2 tsp. baking powder
½ tsp. salt
1 cup milk
1 egg
3 tbsp. Kowalski's Unsalted Butter, melted
12 (6-10") wooden skewers
- garnishes, to taste (optional): Kowalski's Pure Maple Syrup, honey butter or sweetened cream cheese

Directions
  1. In a large skillet, heat 1 tbsp. oil over medium-high heat. 
  2. Add sausage links to pan; cook until browned and fully cooked. Remove from pan; set aside. 
  3. In a large mixing bowl, whisk together flour, sugar, baking powder and salt. 
  4. In a medium mixing bowl, whisk together milk, egg and melted butter. 
  5. Add milk mixture to flour mixture; whisk until just moistened, adding more milk as needed to reach the consistency of a loose cake batter.
  6. In a large deep pot, add enough oil to come halfway up the sides; heat oil to 375°.
  7. Place each sausage link on a wooden skewer; dip into pancake batter to fully coat, scraping off excess. Hold each skewer in hot oil for 5 sec. before dropping into the pot; cook 3-4 at a time until golden-brown (4-5 min.). Remove from pot with a clean strainer or slotted spoon; drain on paper towels. Repeat with remaining sausages and batter, monitoring the oil and adjusting heat as needed to ensure oil stays at 375°. Let final batch cool for 3 min. 
  8. Serve with desired garnish. 
     

Tasty Tips:

  • These pancakes on a stick can be made in a shallow skillet (the shapes will be more rustic).
  • For consistent results, monitor oil temperature with a candy thermometer.
  • If using metal skewers, take care when removing them from the oil, as they can become very hot.
