Honeyed Fig Champagne Cocktails
Ingredients

Kowalski's Pure Honey
  
                                  
  ¼ cup

fresh figs, cut into quarters, plus an extra sliced fig for garnish
  
                                  
  2 sprigs
fresh thyme, plus extra for garnish
  
                                  
  ½ cup
Kowalski's Apple Cider
  
                                  
  1 oz.
Cointreau or Grand Marnier
  
                                  
  
- ice
  
                                  
  8 oz.
Champagne, cold
  
                      Directions
          - In a small saucepan over low heat, combine honey, water and figs; bring to a simmer over low heat, whisking continuously until figs begin to soften (about 3 min.).
 - Add 2 thyme sprigs; simmer for 10 min. more, stirring often.
 - Cool to room temperature.
 - Remove and discard thyme sprigs.
 - Transfer honey mixture and figs to a food processor; blend until smooth.
 - Fill 2 wine glasses with ice; set aside.
 - In a 2-cup spouted measuring glass, combine 2 tbsp. honey-fig mixture with cider and liqueur; stir to combine.
 - Pour evenly into ice-filled glasses; top evenly with Champagne and stir gently.
 - Garnish with extra thyme and fig slices.
 - Reserve extra honey-fig mixture for another time. Store in the refrigerator for up to 5 days.
