This toothsome salad is topped with savory chicken, sweet, earthy beets and tangy goat cheese. It’s a satisfying main dish that embraces the trend of all things "bowl."
Ingredients

Kowalski's Balsamic Vinegar
¼ cup
Kowalski's Freshly Squeezed Lemon Juice

¼ cup

- kosher salt and freshly ground Kowalski's Black Peppercorns, to taste
1 ½ cups
wheat berries, cooked until soft but chewy, cooled
¾ cup
chopped dried fruit (such as dates, figs, apricots and golden raisins)

Minnesota Grown red onion, finely chopped
¼ cup
chopped roasted almonds
½ oz.
finely minced Minnesota Grown fresh herbs (such as mint and parsley), stems discarded, plus some sprigs for garnish, if desired
1 tbsp.
freshly grated lemon zest

grilled chicken breasts (such as Kowalski's Rosemary & Garlic Chicken Breasts)
2 cups chopped
Minnesota Grown Roasted Beets
3-4 oz.
creamy fresh goat cheese (such as Minnesota Grown chèvre from The Humble Goat), crumbled
Directions
- In a large mixing bowl, combine vinegar, juice and honey; slowly drizzle in oil while whisking vigorously. Season dressing to taste with salt and pepper.
- Add wheat berries, dried fruit, onion, almonds, herbs and zest to the mixing bowl; toss gently until well coated.
- Divide salad among 4 serving bowls. Top each bowl with a chicken breast; divide beets and cheese evenly among bowls.
- Garnish with fresh herbs, if desired; serve immediately.
