Moroccan Chicken Sandwiches

Makes 4


A good source of vitamins A, C, E, K, multiple B vitamins, calcium, magnesium, zinc and potassium.

½ cup chicken stock
1 tbsp. Kowalski's Ground Coriander
1 ½ tsp. Kowalski's Ground Cardamom
1 ½ tsp. Kowalski's Ground Cinnamon
1 cup dried chopped apricots
1 ½ cups shredded Kowalski's Signature Rotisserie Chicken (from the Deli Department)
1 cup canned petite diced tomatoes, drained
⅓ cup chopped Kowalski's Pitted Green Olives
¼ cup raw, finely chopped almonds
2 tbsp. Kowalski's Extra Virgin Olive Oil
1 tbsp. red wine vinegar
- kosher salt and freshly ground Kowalski's Black Peppercorns, to taste
1 cup plain Greek yogurt
3 tbsp. Kowalski's Freshly Squeezed Lemon Juice (from the Produce Department)
2 tbsp. Kowalski's Chili Powder
2 tbsp. finely chopped fresh Italian parsley
½ tsp. Kowalski's Ground Cumin
½ tsp. Kowalski's Caraway Seeds
- dash Kowalski's Ground Cayenne Pepper
4 (1 oz. loaves) whole-grain pita bread (such as Joseph's brand)
2 cups mixed baby greens
Order Groceries
  1. Warm stock in the microwave; whisk in coriander, cardamom and cinnamon.
  2. In a large mixing bowl, pour seasoned stock over apricots; set aside for 10 min.
  3. Add chicken, tomatoes, olives, almonds, oil and vinegar to apricot mixture; season with salt and pepper to taste and set aside.
  4. In a small mixing bowl, whisk yogurt with next 6 ingredients (through cayenne); season with salt and pepper to taste.
  5. Cut a pocket in each pita; spread one side of each pocket with some yogurt sauce; stuff each pita with an equal amount of greens and chicken mixture.
  6. Drizzle with addition yogurt sauce; serve immediately.


Tasty Tip:

  • For picnics, separately tote the prepared chicken mixture, yogurt dressing, greens and pita breads; quickly assemble sandwiches when it's time to eat.
