Directions
  1. After draining the capers, gently pat them dry with paper towels to remove as much excess moisture as possible.
  2. In a small skillet, heat oil over medium heat.
  3. Add capers to the skillet; fry for 3-5 min., stirring frequently, until deep green and crisp.
  4. Using a slotted spoon, transfer capers to a paper-towel-lined plate to drain.
  5. In a large mixing bowl, toss together sprouts, tomatoes, most of the cheese, and dressing to taste.
  6. Divide salad between individual serving plates; sprinkle with crispy capers, crouton crumbs, remaining cheese and a generous amount of pepper.

Tasty Tips:

  • We love the texture of crushed croutons sprinkled evenly over this salad. It creates a light, even crunch in every bite.
  • To test whether the oil is ready to fry your capers, add a single caper. If it bubbles immediately, the oil is at the right temperature. This will ensure the capers get crispy without soaking in too much oil.
