Pollo Loco

Ingredients
1 lb. boneless skinless chicken breasts
1 tbsp. Kowalski's Taco Seasoning
½ lb. Kowalski's Fresh Ground Chorizo Pork Sausage
1 cup Kowalski's Signature Queso Blanco Dip (from the Deli Grab & Go Case)
- garnishes, to taste: Kowalski's Fresh Organic Pico de Gallo (from the Prepared Produce Section) and chopped fresh cilantro
8 Kowalski's Flour Tortillas, warmed
Directions
  1. Preheat a grill to medium-high heat.
  2. Season chicken breasts evenly with taco seasoning.
  3. Grill chicken over direct heat on preheated grill until done (about 10 min.), turning halfway through or when grill marks form and chicken releases easily from the grates.
  4. Transfer grilled chicken to a warm plate; tent with foil and let rest for 5-10 min.
  5. While chicken rests, cook and crumble sausage in a medium sauté pan over medium-high heat until cooked through (about 5 min.); set aside and keep warm.
  6. Pour queso blanco into a microwave-safe dish; cover with a towel and microwave on high until hot (1-2 min.), stirring halfway through.
  7. Slice chicken on the diagonal into ½" thick pieces; arrange chicken on a warm serving platter, overlapping slightly.
  8. Top chicken with sausage; drizzle evenly with warm queso.
  9. Garnish with pico de gallo and cilantro; serve with warm tortillas.
