Ingredients
1 ¾ cups
flour, divided
¾ cup plus 3 tbsp.
brown sugar, divided
2 tbsp.
Kowalski's Unsalted Butter
1 cup
semisweet chocolate chips
2 tsp.
baking powder
½ tsp.
kosher salt
1 cup
well-blended cottage cheese

eggs
½ cup
unsweetened almond milk
⅓ cup
vegetable oil
2 tsp.
Kowalski's Organic Madagascar Vanilla Extract
Directions
- Preheat oven to 350°.
- In a small mixing bowl, combine ¼ cup flour and 3 tbsp sugar.
- Using your fingertips, rub butter into dry ingredients until crumbly; set crumb mixture aside.
- In a large mixing bowl, whisk remaining flour and sugar with chocolate chips, baking powder and salt; set aside.
- In a separate large mixing bowl, combine cottage cheese, eggs, oil, milk and vanilla; whisk until smooth.
- Using a silicone spatula, slowly fold flour mixture into cottage cheese mixture.
- Scoop batter evenly into a 12-cup muffin pan lined with paper baking cups; top each muffin evenly with crumb mixture.
- Bake in preheated oven until a toothpick comes out clean with just a few moist crumbs attached (18-22 min.).
- Remove muffins from oven; cool in pan for 5 min.
- Remove muffins from pan; transfer to a wire rack to continue cooling.
- Serve warm or at room temperature.
Tasty Tip:
- For best results when baking with cottage cheese, blend it to a silky-smooth consistency using a high-speed blender, food processor or immersion blender.
