Slow-smoked for hours until irresistibly tender, this brisket comes out with deep, smoky richness and a bark that means business.

4 lbs.
beef brisket
2 tsp.
kosher salt
1 tsp.
freshly ground Kowalski's Black Peppercorns
- Kowalski's Organic BBQ Sauce and Kowalski's Bread & Butter Pickles, for garnish (optional)
Directions
- Preheat smoker to 275°; clean smoker grates.
- Season brisket on all sides with salt and pepper.
- Smoke brisket fat-side up, lid down, until internal temperature reaches 165° (6-8 hrs.).
- Remove brisket from smoker; wrap tightly with foil, then plastic wrap. Place brisket in a dry cooler with a tight-fitting lid; let rest for at least 1 hr. (up to 4 hrs.).
- Unwrap brisket; slice and serve with desired garnishes.
Tasty Tip:
- This is a great "set it and forget it" recipe. No flipping or moving required.
