Rum-Roasted Pineapple

Ingredients

1 large pineapple, peeled, cut into ½" slices, cored
1 cup water
¼ cup Kowalski's Pure Honey
2 tbsp. sugar
2 tbsp. dark rum

Directions
  1. Preheat oven to 400°.
  2. In a small saucepan, combine water, honey, sugar and rum over medium-high heat. Bring to a boil, stirring constantly until sugar melts and syrup thickens slightly (about 3 min.).
  3. Place pineapple rings on a large rimmed baking sheet; cover with syrup. Roast pineapple in preheated oven for 12 min.
  4. Flip pineapple rings over; roast until tender, turning every 5 min. (about 20 min.).
  5. Cool pineapple slightly on baking sheet; cut into ⅓" cubes.
  6. Serve warm over ice cream, cheesecake, yogurt, etc.
