Fresh Romaine, crisp apples and juicy grapes form the base of this vibrant salad, layered with figs, bacon, blue cheese and pepitas, then finished with a homemade black raspberry dressing for a sweet and tangy twist.

Ingredients

A note about dairy: When cheese is omitted or a dairy-free cheese is used, this recipe is dairy free.

5 oz. (about 1 head) chopped Romaine lettuce, washed in ice-cold water and drained well
1 crisp tart apple, cored and diced
1 cup halved seedless red grapes
6 (up to 8) dried or fresh figs, diced
2 oz. (up to 3 oz.) crumbled blue cheese
4 slices (up to 6 slices) Kowalski's Smoked Bacon, cooked crisp and crumbled
2 tbsp. roasted and salted pepitas

Directions
  1. Pour ½ of the dressing into a salad or mixing bowl.
  2. Add lettuce, apple and grapes to the bowl; toss to coat, adding more dressing to taste.
  3. Divide salad among individual serving plates; top evenly with remaining ingredients.
  4. Drizzle with additional dressing to taste; serve immediately.

Tasty Tip:

  • To make this a main-dish salad, add 6-8 oz. diced or julienned deli turkey, such as Boar's Head Ovengold Roasted Turkey Breast.
  • Substitute another soft, tangy cheese, such as goat cheese or feta, for the blue cheese called for in this recipe. Either will complement the salad's sweet fruit and savory bacon.
